What leaves stock when a bill is posted

Stock leaves the store when the bill is posted, not when the order is sent. A dish with a recipe takes its ingredients out; a combo takes its parts out.

When and what

Stock moves once, when the bill is posted. Sending a KOT or voiding an item does not touch stock. What leaves the store depends on what the dish is:

The dish isWhat leaves stock
An inventory item sold as it is (a bottled drink, a packet of biscuits)The item itself, in the quantity sold
A service item with a recipe (a cooked dish)Its ingredients, in the recipe's quantities times the portions sold, when the company has Automatic stock adjustment on restaurant switched on
A comboEach part: a part that is an inventory item leaves itself; a part that is a dish with a recipe takes its ingredients out (again only with Automatic stock adjustment on restaurant on)
A service item without a recipeNothing: it is a service

An item that is comped still goes on the invoice at zero, so the stock it uses still leaves the store. A voided item is not on the bill and takes nothing.

Which store

Stock leaves from the default store of the restaurant's branch. A restaurant keeping its kitchen and its bar in separate stores records the sale against the default one: see Payment methods, banks, QR and the store.

A portion of every ingredient

A recipe lists inventory items with a quantity for one portion. A bill line of three portions takes three times each quantity. If the same dish is on two lines of one bill, each line takes its own.

Common questions

The order was sent but the stock did not move.

Stock follows the bill, not the ticket: it moves when the bill is posted.

We sold a dish without a recipe. Why did stock not move?

A dish without a recipe is a service. Add its recipe (Recipes: what a dish takes out of stock) and make sure automatic stock adjustment on restaurant is on.

A guest returned a dish. Is the stock back?

For a bottled item, yes. For a cooked dish only the dish is returned, not the ingredients: adjust them by a stock count.

Does the stock move twice if the waiter sends two KOTs for the same table?

No. Stock moves once, when the bill is posted, for what is on the bill.

Does a check charged to a room take the stock at the table?

No. Its items leave the restaurant's store once, with the hotel invoice at check-out (Charge a check to a hotel room or event).
