Best sellers, categories, peak hours and table performance

Four tabs that tell a manager what sells, in which category, at which hour, and how long tables stay occupied.

What sells: Sales Summary

Reports › Sales Summary lists each dish sold in the range: Item, Qty, Revenue, Share (its share of the total) and Orders (the number of checks it appeared in), best first. It counts what was ordered, so a dish on a check that was not billed yet is included. Voided dishes are not counted.

Which category: Category Sales

Reports › Category Sales groups the same figures by Category (the product's group in Accounting), then by Item: Qty, Revenue and Orders. Dishes whose product has no group show as Uncategorised.

Which hour: Peak Hours

Reports › Peak Hours shows, for each Hour of the day: Orders (checks billed in that hour), Revenue and Avg/Order, with a bar so the busiest hours stand out. Use it to plan the staff.

How long tables stay: Table Performance

Reports › Table Performance lists each table: Turns (how many checks), Avg Turn (average minutes from opening to closing) and Total Time. A table with many short turns is a fast table; a long Avg Turn points to slow service or a table nobody cleared.

Common questions

Revenue here is different from the Daily Sales Summary.

These tabs add up dishes ordered, not invoices: bill discounts, service charge and VAT are not in them.

A dish is under Uncategorised.

Its product has no group in Accounting: The menu: dishes and drinks are products.

The busiest hour looks wrong.

The hour is the time the bill was posted, not the time the order was taken.

A dish was voided. Is it in the Sales Summary?

No. Voided dishes are not counted. A complimentary dish is counted at its amount.

Can I send the tables of one week to a spreadsheet?

Yes. Each tab has a CSV button that exports its rows.
